Oven Baked Penne with Creamy Alfredo

New York City gave me life. Four days of roaming around the city with no children and two of my best friends was the best gift to myself. I went, saw and ate everything. I met wonderful new people and documented every second of my vacation. I purposely avoided chain restaurants, ate street food, local vendors and small local restaurants. The great news is I finally found a chicken biscuit in NYC and it was AMAZING! I will have to do a post just for that. Overall my trip was a success. I came home recharged and energetic. I loved traveling with my friends and I am planning another trip for May 2015.

I prepared for my trip by cooking comfort foods for my kids. When I returned Eden reminded me that I forgot to bake her favorite penne. So this post is for my Eden. Baked Penne filled with Alfredo, cheese, chicken and broccoli. This dish is very easy to make and enough to feed a family of five for at least two days.

Ingredients:

  • 1 box of penne pasta
  • 2-3 cups of cooked, shredded chicken
  • 2-3 small heads of broccoli chopped (raw or cooked)
  • 2 jars of Alfredo sauce
  • 2 cups of Mozzarella cheese
  • black pepper, basil, parsley (optional)

Directions

1. Cook penne according to directions. I normally cook molto al dente because your pasta will cook further in the oven. Drain.

2. Combine all ingredients (except Mozarella) in a large pot and generously coat with Alfredo sauce. I used raw broccoli because it will cook when you combine all ingredients.  I prefer my vegetables al dente.

3. Grease a large casserole pan with olive oil, pour pasta mix in pan. Top with Mozzarella and parsley, bake at 400 degrees for 20 minutes or until brown and bubbly.

    This is one of my favorite dishes from my stay with you. Just seeing the photo makes me want to eat it all up.

      I have a list of things I am going to bake for you when you return. I do love to cook! My kids are my #1 fan and then you are 2nd! I haven’t heard you complain about my cooking just yet.

        I doubt you will since you put so much love into your cooking, and that is my favorite ingredient.
