Meatball Casserole

This weekend I had the privileged of cooking a large feast for my wonderful neighbors. Their adorably sweet daughter Yasmine graduated from high school. She had a graduation dinner and I was luckily asked to cook for the event. She loves pasta and I don’t blame her! I made several pasta dishes but this was one was new for me. It’s layered with pasta, cheese, marinara and meatballs and baked until golden brown.

Ingredients

  • 1 box of pasta
  • 2 jars of marinara sauce
  • 2 cups of mozzarella cheese
  • 1 bag of frozen meatballs or homemade from 1lb of ground meat

Directions

1.  In a large pot boil water and cook pasta according to the directions. Cook for 1-2 minutes less because your pasta will continue to cook in the oven. Drain and set aside.

2. Heat marinara, add Italian seasoning & drop in meatballs (if you’re using home made be sure they are fully cooked before dropping in sauce).

3. Mix pasta, marinara sauce, & meatballs until well coated.

4. In a large casserole pan pour half of mix, top with 1 cup of cheese. Pour the remaining mix and top with remaining cup of cheese. Bake on 400 degrees until golden brown.

    I love a pasta bake, and trying new dishes, so this one definitely has my attention. It’s going onto the must try list. Great accompanying photographs.
