Banana Bread

Banana Bread

This morning I made turkey sausage wrapped in croissant dough, baked it on 350 for 20 minutes and  made the most delicious pigs in a blanket alternative ever. While we were eating Elise said, “Mom you can cook anything and it’s all so good. Can you make banana bread?” It just so happened that I had 4 overripe bananas and a strong desire to bake. The ladies said it was the best and between the three of them they ate half. Ingredients 3-4 ripe bananas, smashed 1/3 cup of melted butter 1 cup of sugar (you can use 1/2 brown and 1/2 granulated) 1 egg, beaten 1 teaspoon of vanilla 1 teaspoon of almond 1 teaspoon of baking soda pinch of salt 1 1/2 cups of all purpose flour sprinkle of cinnamon and nutmeg Optional Ingredients You can stir in  1/2 cup of...

Chocolate Chip Cookies

Chocolate Chip Cookies

Sometimes I give my kids cookies for breakfast. Let’s keep that one a secret. I do think it’s a kind gesture to wake up to the smell of fresh baked & warm cookies and a glass of ice cold milk. I don’t do this very often but enough to leave a positive impression. Hopefully it will create a lasting memory & something they can share with their own children one day. It’s on my courtesy list. I have a list of things I do that I think my kids would enjoy. I am not going to name everything on the list but I asked each of my kids what their favorites are and this is their collective response. 1. Warm cookies for breakfast 2. Warming the towels in the dryer to have when they get out of the bath. 3. Saying yes when they would normally think...

Fruit Pizza

Fruit Pizza

The past two weeks have been extremely busy. I had to pleasure of cooking the birthday meal for my wonderful friend and neighbor Mrs. Alyssa. She had a wine and paint party and I made several of her favorite dishes.  She also made a fruit pizza, the one and only thing at the party that I did not make I liked the best! It was so delicious that I had to make it for Elise’s birthday which just so happens to be today. I baked the cookie yesterday and this morning the girls and I decorated the pizza and ate it for breakfast. It was indeed a Happy Birthday for my 6 year old today! Ingredients sugar cookie dough (refrigerated, dry mix or homemade) 8 oz cream cheese (room temperature) 1/3 cup of sugar 1 tablespoon vanilla 4 cups of fruit (strawberries, blueberries,...

Chocolate Ganache Pound Cake

Chocolate Ganache Pound Cake

Today I woke and couldn’t think of anything to make for breakfast (yeah it happens). I begin pulling out all of the ingredients in my pantry and placed them on my island. Did I vision pancakes? Nope! I didn’t see waffles either. Wouldn’t you know it, I had just enough to make a pound cake. I mean I used every single egg left in my refrigerator, and all of my flour and sugar are gone (I rarely run out of these items). So I felt as if it were meant to be that I make a pound cake. Ingredients 1/2 pound (2 sticks) butter, plus more for pan 4 ounces cream cheese OR 1/2 cup sour-cream OR 1/2 cup vegetable shortening 3 cups sugar 5 eggs 3 cups all-purpose flour 1/2 teaspoon fine salt 1/2 teaspoon baking powder 1 cup whole-fat OR coconut OR almond OR...

Chocolate Covered Strawberries

Chocolate Covered Strawberries

This week my timeline on facebook was flooded with chocolate covered strawberries. All of I could think of was those look delicious and I should make some. Chocolate covered strawberries are so easy to make. All you need is chocolate chips and clean strawberries. Ingredients  1 container of clean organic strawberries  1 bag of dark chocolate semi sweet chips (you can use any that you like I just prefer dark chocolate) Directions 1. I have a double broiler but I assume most people do not. Therefore I filled a ramekin with chips, and placed in a large pot. I filled the pot with enough water that would surround the ramekin halfway.  You can also use a bowl placed over a large pot of boiling water. I would start off with a low setting and a slow boil. Stir the...
