Cauliflower Cheese Pizza

Cauliflower Cheese Pizza

I am approaching day 60 of my ketosis eating plan. I must say that as the days go on my appetite has almost diminished and it becomes much easier to fight cravings. I am also much more creative with the things that I cook and eat. However, I do miss bread. I miss yeast rolls actually. I never ate that many prior, maybe once every few months but that’s my one major craving along with chocolate ganache cupcakes. I have also caught myself explaining ketogenic vs. low-carb vs. paleo vs. gluten-free to several people. I’ve read so much about them that I just assume everyone would know the common ground rules. I will define these terms very simply. I would suggest consulting a physician for detailed information on the diets. Low-Carb: Also called Atkins....

Stuffed Jalapenos

Stuffed Jalapenos

One of the hardest things about low-carb/keto and gluten-free is reminding yourself to eat. Over time your appetite eventually fades and you stop worrying about food until it’s actually time to eat and then you panic, at least in my case. This lifestyle involves a lot of prepping and cooking. I like to make finger foods such as these peppers so that I can eat them through out the day. I can no longer eat a full size meal without feeling overly full so I eat small meals several times a day. These are perfect, packed with protein, fat and almost no carbs. I made 24 out of 12 full size jalapenos. There are several variants of this recipe so don’t ever be afraid to experiment. Some prefer to blanch the peppers before stuffing them. You will notice I added...

Jalapeno and Corn Dip

Jalapeno and Corn Dip

Quick and easy way to make a delicious dip. It’s easy to add ingredients to make tasty variations on this dip. I included a squeeze of lime to give it a bit of a bite. I also added way more jalapenos because I keep it spicy. You can add cayenne, mayo, Monterrey cheese, etc. This recipe is versatile and it will always be a big hit. Ingredients 4 slices bacon, diced 3 (15.25-ounces) cans whole kernel corn, drained 2 jalapenos, seeded and diced or 2 tablespoons of picked jalapenos 1/2 cup sour cream 1 cup shredded Pepper Jack cheese 1/4 cup Mexican Cheese blend salt, black pepper, cumin, season to taste 1/4 cup of fresh chopped cilantro 8 ounces cream cheese, cubed 2 tablespoons chopped chives Directions 1. Heat a large skillet over medium high heat....

Cowboy Caviar

Cowboy Caviar

This stuff is addictive. I am not a chips and dip person but this is the one dip that I can eat everyday. It’s also a great way to get protein and vegetables in your life. I serve this with tortilla chips but when I am plating for myself I usually add a few scoops on top of a salad and eat my heart out. Ingredients 1 can of  black beans (drained and rinsed) 1 can of corn (drained and rinsed) 1 can of black eye peas (drained and rinsed) 1 stalk of  diced celery 1/2 large cucumber seeded and diced 1/4 cup chopped purple onion 8 cherry tomatoes 1/2 bell pepper, diced 2 small red, orange and yellow pepper, diced Dressing 1/2 teaspoon of cumin 1/4 teaspoon of salt 1 teaspoon black pepper juice from 1/2 lime 1 teaspoon of tajin (photo below) 2/3 cup...

Bacon, Jalapeno & Cheese Devilish Eggs

Bacon, Jalapeno & Cheese Devilish Eggs

This is one of Reuel’s (my husband) favorite meals. Yes, meals is correct because he eats at minimum 10 in one sitting. I do have a huge feeling of pride watching him indulge in gluttony on the food that I made. Therefore I do believe the name devilish eggs are quite fitting for this appetizer. The recipe is quite simple. I make it slightly interesting by with add-ins. The basic recipe will result in a delicious egg but the extras give it new life. The photo above is the clean, pretty version.  I decided not to use my piping bag to fill in the eggs because not everyone has a star tip and piping bag around the house. I carefully spooned in a dollop, added a julienne of turkey bacon and topped with parsley. You can use paprika too. Ingredients 5 eggs 1/4 cup...
