Cauliflower Cheese Pizza

Cauliflower Cheese Pizza

I am approaching day 60 of my ketosis eating plan. I must say that as the days go on my appetite has almost diminished and it becomes much easier to fight cravings. I am also much more creative with the things that I cook and eat. However, I do miss bread. I miss yeast rolls actually. I never ate that many prior, maybe once every few months but that’s my one major craving along with chocolate ganache cupcakes. I have also caught myself explaining ketogenic vs. low-carb vs. paleo vs. gluten-free to several people. I’ve read so much about them that I just assume everyone would know the common ground rules. I will define these terms very simply. I would suggest consulting a physician for detailed information on the diets. Low-Carb: Also called Atkins....

Stuffed Jalapenos

Stuffed Jalapenos

One of the hardest things about low-carb/keto and gluten-free is reminding yourself to eat. Over time your appetite eventually fades and you stop worrying about food until it’s actually time to eat and then you panic, at least in my case. This lifestyle involves a lot of prepping and cooking. I like to make finger foods such as these peppers so that I can eat them through out the day. I can no longer eat a full size meal without feeling overly full so I eat small meals several times a day. These are perfect, packed with protein, fat and almost no carbs. I made 24 out of 12 full size jalapenos. There are several variants of this recipe so don’t ever be afraid to experiment. Some prefer to blanch the peppers before stuffing them. You will notice I added...

Cloud Bread

Cloud Bread

Hi. I know, I know… I haven’t posted in a while. 45 days ago I had a medical emergency. In that event I learned I was pre-diabetic and my thyroid was out of whack. I totally freaked out and had a mini breakdown (15 minutes or so). I came up with the grand idea to change my diet completely and try to manage my symptoms with my meals. A part of diabetes is low-carb and the gluten-free helps with thyroid. In the last 45 days I have been both and my symptoms have almost all went away. I say almost because my blood sugar occasionally drops. I noticed an immediate change within the first 3 days. I also lost a few lbs (30+ not to brag or anything). That’s the reason I have been inactive from my site. But, in those past few weeks I have been researching...

Tamales

Tamales

Confession: I am a food lover. It isn’t much of a surprise to anyone that’s close to me. My love of food goes beyond taste, I love to cook, share recipes, take photos and learn new techniques. I purposely seek out friends that are from different cultures simply to explore their culinary world. Lucky for me I didn’t have to go very far for this recipe. My wonderfully kind neighbors Osmin and Elcy are from El Salvador.  Their culture runs deep and we share  quips about child rearing, respecting our elders, weddings and even funeral etiquette with each other. If you listen to people you can learn so much and I make sure I hang on to every word. Elcy is known for her tamales. A difference between Mexican and El Salvador tamales is the method of...

Turtle Brownies

Turtle Brownies

I love turtle anything! If you love turtle candy you will love turtle brownies. I also included how to turn this recipe into a samoas style goodness. This recipe is decadent and delicious which just so happen to be all of the things that I am devoted too.  Trust me, these should come with a warning label.   Ingredients: Brownie Layer 3/4 cup plus 2 tablespoons all-purpose flour 1/4 teaspoon baking powder 1/2 teaspoon salt 4 oz semisweet chocolate, chopped 1 oz unsweetened chocolate, chopped 1 stick (1/2 cup) unsalted butter, cut into pieces 1 cup packed brown sugar 1 teaspoon vanilla 2 large eggs 1 cup of chopped  nuts (pecan or walnuts work best) Carmel Topping 40 Kraft caramels, unwrapped 1/2 cup heavy whipping cream Directions: Preheat oven to 350°F....
